Land at IST, Havaist airport shuttle or taxi to Sultanahmet (60 min, ₺200 / $6). Check into a Sultanahmet boutique hotel. Evening: walk to the Blue Mosque and Hagia Sophia exteriors (both lit after dark). Dinner at Matbah (Ottoman-palace-cuisine).

Day 3
Istanbul · Grand Bazaar + Bosphorus ferry
Morning at the Grand Bazaar (the 15th-century covered market; 4,000 shops; bargain). Lunch at Pandeli (inside the Spice Bazaar). Afternoon Bosphorus ferry — the public commuter ferry Karaköy→Kadıköy (20 min, ₺30) is the one locals use. Evening in Kadıköy with dinner at Çiya Sofrası.

Day 4
Istanbul · Karaköy + hamam
Morning in Karaköy (the waterfront restoration neighbourhood — design shops, third-wave coffee, Istanbul Modern art museum). Lunch at Neolokal. Afternoon at a traditional hamam — Cağaloğlu Hamamı (1741) or the smaller Kılıç Ali Paşa Hamamı. Evening dinner at Mikla (rooftop, Mehmet Gürs).

Day 5
Fly Istanbul → Cappadocia
Morning domestic flight IST → ASR (Kayseri) or NAV (Nevşehir), 1h 20m. Airport transfer to Göreme (1h). Afternoon at Göreme Open Air Museum (11th-century Byzantine rock-cut chapel complex). Evening in Göreme with fairy-chimney views. Cave hotel.

Cappadocia · Hot-air balloon sunrise + underground city
Pre-dawn pickup for hot-air balloon (5 a.m., sunrise at 6 a.m., 1h airborne, 100+ balloons visible together). Back to the hotel for breakfast. Afternoon at Derinkuyu or Kaymaklı Underground Cities (Byzantine-era refuges descending 8 levels down). Sunset at Red Valley.

Cappadocia · Ihlara Valley + Uçhisar
Morning at Ihlara Valley — 16 km canyon with 100+ Byzantine rock-cut chapels carved into the cliffs. Walk the 4 km central section (moderate). Lunch at Aşiyan in Belisırma. Afternoon at Uçhisar Castle (panoramic view of the whole Cappadocia region from the top).

Day 8
Fly Cappadocia → Antalya (or Kaş)
Morning flight from Nevşehir or Kayseri to Antalya (1h 20m, often requires Istanbul connection). Drive west to Kaş (3h) for the quieter coast experience, or stay in Antalya for the old town (Kaleiçi). Evening beachfront dinner.

Depart · Antalya flight home
